Here we go, heat the oven to 220C/200C fan/gas 7.

Combine 350g of flour

3 tbsp sugar

1 tsp baking powder

A pinch of salt

85g of cold butter (cubed). Rub all ingredients together with your fingers until it forms a crumb.

Put 3 tbsp milk with a squeeze of lemon and 1ssp vanilla essence in the microwave for 30 seconds until warm.

Make a well in the crumb and add the warm milk & lemon and mix so the mixture will become a dough.

The mixture is ready now to roll out. Place a little flour on a board or your worktop (modern worktops are great for rolling as they are wider and easy to clean after). Aim for an inch in thickness. Use a round or crinkly cutter to make your scones, 6 cm for delicate mini scones or 9cm for a larger tea time scone.

Put your scones on a greased baking tray, and glaze with a little egg.

Pop in the oven for 10 munites until golden brown.

Serve the scones with clotted cream and strawberry jam or fresh strawberries for a real Mother’s Day treat that’s sure to impress.
